Zusammenfassung:The invention relates to a method for synthesizing gamma-aminobutyric acid by virtue of fermentation and a culture medium for synthesizing the gamma-aminobutyric acid by virtue of fermentation. The method comprises the following steps: adopting aspergillus oryzae 3.042, activating the aspergillus oryzae by a potato dextrose agar medium culture plate, transplanting the strain to a seed solution for cultivation to obtain seeds for fermentation, inoculating the strain into the culture medium by the inoculum size of 1-8% by volume, adjusting the initial pH of the culture medium to the range of 6.50-7.50, and culturing under the conditions of the rotating speed of 130r/min and 25-35 DEG C for 1.5-3 days, thereby obtaining the fermentation liquor of the gamma-aminobutyric acid, wherein the culture medium comprises 30-90g/L rice bran, 20-60g/L L-sodium glutamate and 4-8g/L calcium chloride. The fermentation method for synthesizing the GABA is simple to operate, high in yield and efficiency and high in safety; and the fermentation liquor of the GABA can be applied as an additive to health food and beverages.
