Zusammenfassung: | The invention relates to the technical field of food processing and in particular relates to beef slide and a preparation method of the beef slide. The beef slide is prepared from the following raw materials in percentage by mass: beef, starch, ginger, white sugar, salt, aginomoto and water, wherein the temperature of the water is 0-5 DEG C. The preparation method of the beef slide comprises the following steps: preparing beef into spindly beef strips, adding the beef strips into a pulping machine for pulping, adding ice water in the pulping process, and controlling the temperature of the beef strips to be 0-10 DEG C; pulping the beef strips until the beef strips are sticky, adding salt and pulping for 5-6 minutes at the rotation rate of 40-50 revolutions per minute, adding ginger, aginomoto, white sugar and starch, pulping at the rate of 20-30 revolutions per minute until no powder flies, uniformly pulping at the rate of 40-50 revolutions per minute, pickling the beef strips at 0-4 DEG C for 4-8 hours to obtain the beef slide. The preparation method of the beef slide is simple in process and few in steps; the original juice and original taste of the beef are retained to a maximum extent. |
