Zusammenfassung:The invention discloses a method for preparing a fermentation agent microcapsule. The fermentation agent microcapsule is prepared by performing dynamic high-pressure homogenization on mixed mold by using a high-pressure microjet crushing technique so as to micro-crush the mixed mold under the mechanical actions of high-speed shearing, high-frequency oscillation, void effect, convection impact and the like. The method is easy to control and simple and convenient to operate, the prepared fermentation agent microcapsule is high in yield and high in stability, micro holes with adsorbability are formed in the surface of cell walls of the fermentation agent microcapsule, so that enzyme in the fermentation agent microcapsule can be slowly released in the fermentation process, and meanwhile a certain protection function on the enzyme is achieved. By adopting the method, a procedure that a conventional fermentation agent needs to be cultured under appreciate conditions when being prepared is effectively reduced, the defect that the conventional fermentation agent is long in fermentation period in the meat product fermentation process is overcome, the production and the application of the fermentation agent are beneficial for industrialization, and thus the industrialization degree of a fermented product is increased.
