Zusammenfassung:	The invention discloses methods for extracting and modifying preserved vegetable skin dietary fiber. One method for extracting the preserved vegetable skin dietary fiber comprises the steps of carrying out desalting twice after drying preserved vegetable skins, and the other method for extracting the preserved vegetable skin dietary fiber comprises the steps of drying the preserved vegetable skins after carrying out the desalting twice; a method for modifying coarse dietary fiber comprises the step of carrying out cellulase hydrolysis on the coarse dietary fiber. The methods have the beneficial effects that in the coarse dietary fiber, the contents of TDF (total dietary fiber) and SDF (soluble dietary fiber) are high, and the content of NaCl is low; due to the modification of the coarse dietary fiber, the content of the SDF is further increased, and various physicochemical properties of the coarse dietary fiber are improved; the methods are simple, the cost is low, and the large-scale industrial popularizatio
