Zusammenfassung:The invention discloses a process for producing soy sauce by using lentinus edodes stems. According to the process, the lentinus edodes stems are enriched with various nutrient elements and vitamins which are necessary to a human body. The process comprises the following steps: preparing the lentinus edodes stems, preparing lentinus edodes mycelium liquid, mixing and fermenting, removing impurities and sterilizing, packaging and the like; putting the picked lentinus edodes stems without diseases into a baking oven; baking at 75-80 DEG C for 5 minutes; crushing the baked lentinus edodes stems by using a crusher; and commonly fermenting the crushed lentinus edodes stems and sauce.
