Zusammenfassung:The invention discloses a production method for pure-manual sweet potato vermicelli. The production method adopts high-quality sweet potatoes of the southern mountainous area in Anhui Province as raw materials and comprises the following steps: (1) adding water into raw materials and agitating: adding 0.75-1 kilogram of the water into 0.5 kilogram of sweet potato starch and agitating for 1-1.3 hours; (2) primarily filtering: filtering by using a filtering net with the size of 250-300 meshes to remove impurities including stones and the like; (3) settling and agitating: conveying the materials into a cylinder to be settled and changing the water for one time every two days, wherein the water is changed for 2-3 times; agitating the materials in the cylinder for one time when the water is changed each time; (4) purifying; (5) steaming: putting the raw materials into an iron pot and steaming by using firewood for 5 minutes; (6) airing indoors: putting steamed and molded vermicelli blocks on a bamboo pole to be ai
