Zusammenfassung: | The invention relates to a mulberry pulp freeze-drying tablet and a process thereof. Raw materials containing mulberry fresh fruits are subjected to washing, beating, blending, homogenizing, filling, freezing, freeze-drying, and sealing by filling nitrogen to prepare the mulberry pulp freeze-drying tablet. The invention employs two-stage high pressure homogenization to homogenize mulberry pulp components, and a freeze-drying technology to retain almost all of the nutrients except water, such as mulberry source anthocyanin, amino acids, minerals and vitamins; and a low-calorie nutritive sweetener is added to substitute sugar. The prepared mulberry pulp freeze-drying tablet has characteristics of low sugar, low heat, moderate sweet and sour taste, rich fruitiness, and good preservability and portability, and can be eaten directly or mixed with water for drinking. |
