After curing for a long time, nitrite can be generated, and only saccharin sodium and sodium cyclamate are employed as sweet materials, however, all the substances can bring harmful effects to the health of eaters. According to the invention, eaters can cure sweet and sour melon and fruit vegetables by themselves. The product can be dissolved in water to cure 4kg of melon and fruit vegetables. As a small amount is cured each time and the cured melon and fruit vegetables can be eaten up in a short period of time, the sulfur bleaching agent or sodium benzoate is unnecessary to be added.
