The organic mature honey of the invention is prepared by: collecting nectar by bees, then conducting brewing and dewatering, to make the water content less than 20%, and making disaccharide fully converted into monosaccharide, and bringing the total content of glucose and fructose up to over 70%, and performing natural maturing to obtain the honey. The process of usually needs about 7 days, and the organic honey of the invention has the nutritional components possessed by real honey.
