The invention discloses a production method of hydroxypropyl konjac glucomannan and a product. The product is characterized by being prepared from 100% of konjac glucomannan, a proper amount of basic catalyst, 20-30% of epoxypropane or epichlorohydrin, 200 percent by mass of alcohol and the balance of other substances; and the preparation method comprises the following steps of: putting the konjac glucomannan, the alcohol, the catalyst and the epoxypropane the total amount of which is 20 to 30 percent of that of the konjac glucomannan into a reaction kettle; slowly heating to a temperature of between 60 and 75 DEG C to react for 60 to 120 minutes; cooling to a temperature of between 40 and 50 DEG C; regulating the pH to be between 7 and 8 with glacial acetic acid; filtering, and washing with alcohol with concentration more than or equal to 65 percent; and filtering, baking and crushing to obtain the hydroxypropyl konjac glucomannan.
