Zusammenfassung: | The invention relates to a fruit and vegetable fresh-keeping process, which relates to the technical field of processing fruits and vegetables, and comprises the following steps of: cleaning, drying, sealing, microwave sterilizing, high-temperature sterilizing and vacuum sealing. The fruit and vegetable fresh-keeping process is characterized in that: low-temperature air drying is required in a drying process, and the air drying temperature is 15-50 DEG C; the dried fruits and vegetables are packed in a sealing bag so as to be sealed; microwave sterilization is carried out on the sealed fruits and vegetables for 20-40 minutes by adopting ultraviolet rays with microwave length being 300-600nm; a low-temperature steam sterilization stage is carried out for 25-40 minutes at the temperature of 30-45 DEG C after microwave sterilization, and then the temperature is reduced slowly; and after low-temperature sterilization, the sealing bag is vacuumly sealed. |
