Zusammenfassung: | The invention discloses non-fried carrot and a preparation method thereof. The method comprises the step of puffing carrot fruit in a puffing tank at variable temperature and pressure difference to obtain the puffed carrot, wherein the variable temperature and pressure difference puffing process comprises the following steps of: 1) increasing the temperature in the puffing tank to 90-100 DEG C, increasing the pressure to be 0.1-0.3 MPa higher than the atmospheric pressure outside the puffing tank, and maintaining the temperature and the pressure so that the surface temperature of the carrot fruit is consistent with the temperature in the puffing tank; 2)reducing the pressure in the puffing tank to a vacuum state, reducing the temperature to 75-90 DEG C under the vacuum state, and then maintaining the pressure and the temperature in the vacuum state so that the water content of the carrot fruit maintains 3-5%; and 3) reducing the temperature in the puffing tank to 10-30 DEG C, and holding for 30-60 minutes and |
