Zusammenfassung:	The invention provides a water-soluble natural beta-carotin preparation method which is characterized in that the ultrasonic adduction method is adopted to adduct beta-carotin to beta-cyclodextrin or gam-cyclodextrin cavity to obtain stable beta-carotin/cyclodextrin adduction compounds with different contents. The prepared beta-carotin/cyclodextrin adduction compounds cannot be affected by light, oxygen and hydrolysis conditions so that the bioavailability and stability of the beta-carotin are improved.
