The nutrition dried noodle is characterized by comprising the compositions with the following weight percentage of 75-98 percent of wheat flour, 0.2-3.9 percent of water shield juice, 0.2-6 percent of Chinese yam powder, 0.2-6 percent of konjak powder, 0.2-6 percent of liljum powder, 0.2-6 percent of Chinese yam powder, 0.2-6 percent of kudzu powder, 0.2-4 percent of ginkgo powder, 0.2-4 percent of fern powder, 0.2-6 percent of opuntia juice and 0.05-0.4 percent of salt. Compared with existing noodles, the nutrition dried noodle is provided with obvious superiority and eating effect. Without impurities, the nutrition dried noodle is prepared by mixing various materials of the water shield, the konjak, the liljum, the Chinese yam, the kudzu powder and the like with flour.
