Zusammenfassung: | The invention discloses a method for processing Pu'er tea by bacterial fermentation. The method comprises the following steps: subjecting freshly-harvested tea leaves to fiber decomposition treatment and sterilization treatment, and inoculating at least one bacterial strain isolated from Pu'er tea that is preserved for a long time to allow fermentation based on the treatment of dry-house fermentation. The method significantly shortens the fermentation time, increases the contents of statin, gamma-aminobutyric acid and polyphenols during the fermentation stage, enhance the activity of scavenging DPPH free radicals, and produces Pu'er tea with the similar flavor and fragrance as the preserved Pu'er tea. |
