In a process for concentrating solutions by freezing, one component of the solution is partly crystallized in a chiller and the crystals are then passed to a storage zone in which the crystals are allowed to grow before being passed to a purification column. As shown, beer is passed through a line 11 to a jacketed chiller 13 having a scraper 15, the resultant ice crystals and mother liquor being then forwarded to a storage vessel 19 containing an agitator 20. The crystals remain from one to ten hours in vessel 19 during which time they increase in size, and are then passed to a purification column 22. In the latter the crystals move as a compact mass towards a heater 24 which melts the crystals, part of the melt water being forced back through the crystal mass by a pulse unit 28 to remove occluded liquor therefrom and the remainder of the melt being extracted through line 25. The mother liquor is extracted from the purification column through a filter 23 and is collected in a drum 27, whence it is supplied, via line 32, to the inlet of a second chiller 13a in which the process is repeated. A third stage 13b, 19b, 22b and 25b is provided and receives mother liquor from the drum 27a of the second stage. Liquor from drum 27 may be recycled to the inlet of chiller 13 via valve 51 while liquor from drum 27a may be recycled to chiller 13 via valve 55 or to chiller 13a via valve 53. Similarly, liquor from drum 27b may be returned to chiller 13 via valve 61, chiller 13a via valve 59 and chiller 13b via valve 57. The chillers 13, 13a and 13b receive and return refrigerant from and to respective receivers 39, 39a and 39b having connections with a refrigeration unit 37. The process may be used for milk, fruit juices, vegetable juices, vinegar, coffee, tea and wine or to separate mixtures of organic materials. Specification 807,100 is referred to.
