Also disclosed is a biodegradable food service item, which includes a biodegradable substrate having at least one food contact surface. A coating is applied over the at least one food contact surface, which is formed from the biodegradable aqueous dispersion. L'invention concerne une dispersion aqueuse biodégradable, qui est constituée d'environ 35 à environ 75 pour cent en masse d'eau et d'environ 25 à environ 65 pour cent en masse de polyhydroxyalcanoates. L'invention concerne également un article de service alimentaire biodégradable, qui comprend un substrat biodégradable ayant au moins une surface de contact alimentaire. Un revêtement est appliqué sur ladite au moins une surface de contact alimentaire, qui est formée à partir de la dispersion aqueuse biodégradable.
