DEVICE FOR MICROWAVE AGING AND METHOD FOR MICROWAVE AGING

[Problem] To provide a device for microwave aging whereby the time required to age a food can be shortened and the yield thereof can be improved. [Solution] A device for microwave aging which comprises a microwave aging unit 30 comprising an aging chamber housing a food therein, an irradiation port irradiating microwave to the aging chamber and a blower fan blowing air into the aging chamber, a cooling unit 10 comprising a cooling chamber cooled with a cooler, a microwave oscillation unit 20 connected to the irradiation port and a control unit 40, wherein the aging chamber is disposed within the cooling chamber, and a method for microwave aging using the aforesaid device. Le problème décrit par la présente invention est de pourvoir à un dispositif de vieillissement par micro-ondes permettant de raccourcir le temps nécessaire au vieillissement d'un aliment et d'améliorer son rendement. La solution selon l'invention porte sur un dispositif de vieillissement par micro-ondes qui comprend une unité de vieillissement par micro-ondes (30) comprenant une chambre de vieillissement contenant un aliment en son sein, un orifice d'exposition permettant d'exposer la chambre de vieillissement aux micro-ondes et un ventilateur de soufflage soufflant de l'air dans la chambre de vieillissement, une unité de refroidissement (10) comprenant une chambre de refroidissement refroidie au moyen d'un refroidisseur, une unité d'oscillation de micro-ondes (20) reliée à l'orifice d'exposition et connectée à une unité de commande (40), la chambre de vieillissement étant disposée dans la chambre de refroidissement. La solution selon l'invention porte également sur un procédé de vieillissement par micro-ondes faisant appel au dispositif susmentionné.
