L'invention concerne un produit salant à faible teneur en sodium conjointement cristallisé homogène et multiconstituant destiné à une utilisation alimentaire et pharmaceutique. Le produit salant de l'invention est sensiblement sans ségrégation, possède une faible hygroscopicité et s'écoule librement. Il possède de bonnes propriétés de diminution microbienne et un goût agréable. Il remplit la fonction du sel (NaCl) dans les aliments transformés et maintient également la sécurité microbienne, la valeur nutritionnelle et le goût. Le produit salant de l'invention comprend un constituant de chlorure de métal alcalin et de métal alcalino-terreux et un constituant de chlorure d'ammonium. Un métal alcalin est le potassium (K) et éventuellement également le sodium (Na). Un métal alcalinoterreux est le magnésium (Mg), ou le magnésium (Mg) et le calcium (Ca) possédant la somme des rapports molaires 1.
