Zusammenfassung:	Disclosed herein are compositions that include a blend of sucrose polyesters, wherein each sucrose polyester includes a sucrose moiety and a plurality of fatty acid ester moieties, wherein from about 50% to about 90%, by weight, of the combined fatty acid ester moieties of the sucrose polyesters in the blend are palmitic fatty acid ester moieties. La présente invention porte sur des compositions qui comprennent un mélange de polyesters du saccharose, chaque polyester du saccharose comprenant une fraction saccharose et une pluralité de fractions esters d'acide gras, d'environ 50 % à environ 90 %, en poids, des fractions esters d'acide gras combinées des polyesters du saccharose présents dans le mélange étant des fractions esters d'acide gras palmitique.
