Zusammenfassung:	A method of washing ware, in particular in an automatic institutional ware washing machine, is disclosed, using a detergent composition containing a polysaccharide, which eliminates the need for a surfactant in the rinse step. The polysaccharide provides a layer of polysaccharide on the ware so as to afford a sheeting action in an aqueous rinse step without any added rinse agent. L'invention concerne un procédé de lavage de vaisselle, en particulier dans un lave-vaisselle industriel classique, au moyen d'une composition détergente contenant un polysaccharide, qui élimine le besoin de tensioactif pendant l'étape de rinçage. Le polysaccharide forme une couche de polysaccharide sur la vaisselle, de sorte à obtenir une action d'exfoliation pendant une étape de rinçage à l'eau, sans produit de rinçage ajouté.
