At least about 38% by weight of the amylose fragments have a degree of polymerization (DP) of at least about 35. L'invention concerne un procédé servant à produire un amidon et consistant à traiter un amidon alimentaire contenant de l'amylopectine par une glucanotransférase afin de produire un amidon à chaîne étendue et à traiter cet amidon à chaîne étendue par une enzyme de déramification afin de produire un produit d'amidon contenant des fragments d'amylose.
