Zusammenfassung:	METHOD AND APPARATUS FOR EXTRACTING CHOLESTEROL FORM EGG YOLK of the Invention The present invention is directed to a method for extracting cholesterol from egg yolk. In accordance with the method, a mixture of egg yolk solids, water and oil is provided. The mixture is then subjected to moderate shear extraction conditions by repetitively pumping the mixture in a flowing stream through a conduit provided with at least one small diameter orifice and at least one screen mounted transversely to the direction of flow of the flowing stream. The mixture is then separated into water and oil phases by centrifugation to provide an oil phase which retains the cholesterol and a water phase which contains the egg solids.
