Zusammenfassung:PROCESS FOR PRODUCING BREWER'S WORT In a process for producing brewers' wort by the enzymatic treatment of starchy materials comprising a predominant quantity of barley, the enzyme is one which is produced by the aerobic culture of a microorganism belonging to Streptomyces. The barley to be treated should be generally gelatinized, but, when a protease produced by a microorganism belonging to Aspergillus is used in combination with the enzyme, the gelatinization treatment of the barley is not essential.
