Zusammenfassung:IMPROVED ANGEL FOOD CAKE MIX Robert E. Oborn An improvement in the art of culinary mixes containing dried desugared egg white, particularly angel food cake mixes, is provided by adding an alkali metal bisulfite thereto in an amount of from about 0.005% to about 1.0% by weight of the dried desugared egg white. Preferably, the amount of alkali metal bisulfite added is from 0.05% to 0.50%. Improved culinary products are also provided by adding the bisulfite to prepared dry culinary mixes. Also disclosed is a process for the production of improved culinary products which require the use of less egg white, and in the case of angel food cakes, other improvements are cakes having substantially no cupping, whiter color, improved texture and improved recipe tolerance.
