Zusammenfassung:	A milk-clotting enzyme having proteolytic activity similar to rennin and having the ability to cleave the phenylalanine-methionine bond of a kappa-casein polypeptide chain is produced by culturing a species of Physarum polycephalum in a culture medium until a substantial quantity of milk-clotting enzyme is accumulated extracellularly in the medium, and separating the enzyme from the culture medium.
