Zusammenfassung: | The present invention generally relates to a process for formulating moringa flavored multibran bread comprises weighing dry ingredients in a required quantities and mixed in kneader; adding Luke warm water along with moringa extract, multibran slurry and mixing thoroughly to form dough; adding yeast-sugar solution thereby kneading for 1 min; adding vegetable oil and cutting dough in sections of 600 g and placing into greased mold; covering prepared dough with cling film wrapper and proofing at room temperature; baking in a pre-heated oven at 2100 C for upper plate and 2500C for lower plate of the oven for 15 min; and placing baked bread in a polyethylene bag to retain the moisture and left to cool to room temperature thereafter cut into slices.
