Device and method for deboning meat with bone

A deboning device of the present invention is provided with: a clamper for holding meat with a bone having a head of bone sticking out of at least one end thereof; a first cutting blade for forming an incision in the circumferential direction of a meat portion in the vicinity of the held portion of the meat with a bone, the first cutting blade being capable of moving towards and away from the meat with a bone having one end thereof held by the clamper; a meat portion separation member capable of being inserted into the incision in the meat with a bone held by the clamper; an elastic support portion for elastically supporting the meat portion separation member so as to cause the meat portion separation member to apply an elastic force to the meat with a bone; a meat portion separation drive portion for allowing a gap between the clamper and the meat portion separation member to be variable; and a second cutting blade for cutting the meat portion attached to an end of the meat with a bone opposite the end having the head of bone, the second cutting blade being capable of moving towards and away from the meat with a bone held by the clamper.
