Zusammenfassung:The concept of the Central Food Preparation System (CFPS) is to concentrate the preparation of food items in a production mode and to regulate the heat and serve function in the dining hall kitchen. An analysis of scientific, technological, and engineering parameters of CFPS operation methodology and practices revealed that the CFPS was not operating in its intended design in the areas of Production, Quality Assurance, Quality Control, and Staffing.
