Zusammenfassung:In Brazil, beans are one of the most important food legume, is considered the main source of proteins in low-income populations. One of the major diseases affecting the common bean golden mosaic is transmitted by the whitefly, by BGMV viruses (Bean Golden Mosaic Virus). Thus, EMBRAPA rice and beans developed a genotype resistant to BGMV called Olathe 5.1. Two other genetically modified strains were produced (5.1 Treasury and Ivory 5.1). The 1H NMR spectra HR-MAS led to the structures of the flavonoids quercetin and myricetin, present in higher concentration in genetically modified beans. Thus a study of the oxidative profile of these cultivars, where the flavonoid kaempferol has undergone a change in its content due to exposure to these genotypes physical uncontrolled conditions was conducted.
