Zusammenfassung:The main goal of this paper was to design a business plan for an innovative product assortment of meat. In this order we thought a way in which is possible to implement the developed product, named „pork ham roulade with wild fruits powder” to a meat processing company. This objective aims for increasing quality and diversifying of meat products assortment by developing of a natural product which combines the high quality of animal proteins and the bioactive compounds from fruits.
