Zusammenfassung: | The Indian nest, Aleurites moluccana (L.) Willd., Is used for weight loss, known as pharmaceutical activity, without studies that report the bromatological composition of this seed. In this context, the objective was to present the bromatological characterization of these seeds, with and without peel, available in the market. For this, 200 seeds were obtained from commercial sites, 50% with bark (C / C) and 50% with bark (S / C). Weighed individually, dried in an oven, and ground to obtain a bran. Bran oil was extracted in goldfish determiner. The defatted meal was characterized by physico-chemical methods: Determination of moisture content, proteins, minerals, neutral detergent fiber (NDF) and acid detergent fiber (FDA). There was no statistical difference for the bromatological components of the evaluated seeds, except for carbohydrates, which were higher in those with bark (31.45g / 100g) compared to bark (19.91g / 100g), although the NDF and ADF contents did not differ. Weight variability was similar (0.44g and 0.39g, with and without bark, respectively). The maximum (68.4%) and minimum (37.2%) gross fat contents found in the seeds were high when taken into consideration in other nuts. The mean crude protein of both seeds was approximately 14%.
