Zusammenfassung: | Study of carcass composition of Ankole bulls according to weight or age and to duration of fattening period. Thirty two young bulls divided into 2 categories of live weight were used to study the effect of the initial weight and of an intensive fattening period on the composition of the carcass. The slaughterings were carried out in Bujumbura, according to the techniques usually done for the carving of the carcass. A short period of intensive fattening does not improve the composition of the carcass into pieces of great value in butchery. |
