Zusammenfassung:This study is aimed at the development of a method for integrated mite control in the industrial production of speck. The investigation were carried out on the premises of five factories in the north-east of Italy. Tyrophagus putrescentiae and T. longior were predominant. The gaseous ozone treatment at low level (0.4 ppm) was able to kill mites in a period within 15 days and 1 month. The characteristic layer of mould on the product surface reappears within 1 month from the end of treatment with ozone.
