Zusammenfassung: | Antioxidants are compounds used in the food industry by their preservative
capacity and it is considered that they prevent diseases. In this investigation one
studies the antioxidant capacity of aqueous extracts by Cyclic Voltametry and
the reducing effect of ethanolic extracts by FRAP (Ferric Reducing Antioxidant
Power) of 15 tropical fruits. The best results for antioxidant capacity and
reducing capacity are those of Curuba (Passiflora mollisima (HBK) Bailey) with
a maximun height tip of 38.6 tenth of ìA at a 316.6 mV potential and 4127.346 ±
108.62 mg Ascorbic Acid/100gr of sample, respectively.
Los antioxidantes son compuestos usados en la industria de alimentos por su
capacidad conservadora y se considera que previenen enfermedades. En esta
investigacion se estudia la capacidad antioxidante de extractos acuosos por
Voltametria Ciclica y el efecto reductor de extractos etanolicos por FRAP (Ferric
Reducing Antioxidant Power) de 15 frutas tropicales. Los mejores resultados
tanto de capacidad antioxidante como reductora son los de la curuba larga
(Passiflora mollisima (HBK) Bailey) con una altura de pico maxima de 38,6
