Zusammenfassung: | The relation between fats and health, which has been for more than twenty years, a very important issue in the world of Nutrition and Medicine, has finally reached the great public, who has learnt that the consumption of different fat products has different effects.
There is considerable evidence that the regulation of fatty acids is mainly controlled by genetic factors, and that it is more influenced by its components than by the amount of fat consumed. However, the variation of the components has, by far, less influence on health than what is suggested by commercial ads. The purpose of this paper is to show taht a balanced consumption of fatty matter of diverse sources, avoiding an excessive amount in the daily intake, appears to be the most advisable situation.
La relación entre el consumo de materias grasas y la salud preocupa desde hace más de veinte años al mundo de la nutrición y de la medicina; cuestión que ha terminado por alcanzar al gran público, generando el convencimiento de que no es indiferente consumir cualquier cuerpo graso.
Existe considerable evidencia de que la regulación de los ácidos grasos corporales se controla principalmente por factores genéticos y está influenciada más por la composición que por la cantidad de las grasas consumidas. Sin embargo, la variación en la composición tiene una importancia mucho menor sobre la salud que la que sugieren los avisos publicitarios. Parece ser, así lo demuestra este trabajo, que lo más apropiado consiste en consumir equilibradamente materias grasas de fuentes diversas, sin extralimitarse en las dosis diarias. |
