Zusammenfassung: | Fruits are a very important group in the human diet. Their water content, fiber, vitamins and minerals,
make them an essencial source of nutrients to enjoy a healthy life. Among tropical fruits soursop highlights because it
has a rich aroma and flavor, and had determined that have positive properties with health effects. The soursop is the
most important commercially from the family of the Annonaceae. Is oval shaped with a dark green skin with thorns
small, soft and fleshy. Its flesh is white, creamy, smooth and completely covers the seeds. It is consumed fresh and has
great industrial potential for high yield per fruit. The objective of this work is the development of methodologies to
determine the physical-chemical profile of a sample of commercially-available soursop in a supermarket with a high
presence in the state of Lara, with the aim of proposing this fruit as raw material for develop, through membrane
technology, a potentially functional concentrated. The methodology is based on the protocols of the Colombian
Technical Standards and COVENIN. The results show that (minimum-maximum) with a fruit gauge A-B and Class IIExtra,
and a mass of 547-1249 g, are: equatorial diameter 29-41 cm, polar diameter18-24 and 51-145 seeds. The pulp
has a 62-82% yield, total soluble solids 13-24 ° Brix, acidity 0.67-1.04% malic acid, pH 5.33-.68, and Vitamin C 19-40
mg ascorbic acid per 100 g of edible portion. Additionally, this fruit has some features that make it very promising as
raw material when compared with other tropical fruits. Future research will enable complete the profile of the soursop,
with the determination of another bioactives.
Las frutas conforman un grupo de alimentos muy necesarios en la dieta humana. Su contenido en agua,
fibra, vitaminas y minerales las hacen una fuente de nutrientes imprescindible para disfrutar una vida saludable. Entre
las frutas tropicales la guanábana destaca porque tiene un rico aroma y sabor, y se ha determinado que posee
propiedades con efectos positivos a la salud. La guanábana es la más importante comercialmente de la familia de las
Annonaceae. Es de forma ovalada con una cáscara verde oscura de espinas pequeñas, suaves y carnosas. Su pulpa es
blanca, cremosa, suave y recubre totalmente las semillas. Se consume fresca y tiene gran potencial industrial por su alto
