Zusammenfassung:During the last few years the loss in tomatoes quality has become evident due to the arrival in the market of the genetically modified varieties, the improved varieties. This fact has generated much discussion among consumers. For this reason, several studies are being done to obtain plant material where it recovers, or improved, the sensory profile of the original traditional varieties. It's also wanted to achieve this new plant material obtains a better agronomic behavior, typical characteristic of the improved varieties. In this study we want to compare different traditional varieties (Raf, Black from Tula and Costoluto Genovese), with the pre-improvement material (UMH 1200) and the resulting hybrid combinations. To do this, it has been realized different agronomic and morphological studies, as well as physical and chemical analysis. Finally, the descriptive sensory analysis has been carried out, from trained tasting panel, to determine if they can perceive significant difference between the traditional varieties and the improved varieties. The results for the agronomic studies have revealed that the hybrids studied don't show an improvement in their agronomic behavior compared to the original traditional varieties. In addition it has been observed as the pure line doesn't avoid the incidence of physiopathies, such as the cracked, except in the case of the Costoluto Genovese which has been observed an improvement in the hybrid for this variable. As regards the morphological characters, the results have shown that the crossing causes changes in the color of the fruits, and improves the firmness in case of the Costoluto Genovese and Black from Tula lines. In the chemical composition we find that the hybrids contain less soluble solids and less acidity than the original material traditional, a fact that is also reflected in the results obtained in the descriptive sensory analysis. For the study it can be concluded that: the hybrids obtained from the pure line UMH 1200 don't reach a great agronomic behavior, as nor a good sensory profile.
