Zusammenfassung: | The apple is a fruit very cultivated and consumed throughout the world for its nutritional characteristics and for its ease of consumption. There are several authors that state the effect of the altitude in the quality of the apples. From the different experiences of good quality apples seen both in Catalonia, with apple of Girona, and in Europe with the production of South Tyrol in Italy , it became the idea of studying varieties of apples produced in mountain climate, specifically in Sant Llorenç de Morunys and compare them with an established reference range. The objective of this study is to characterize the physical-chemical and the organoleptic quality of the apple varieties that have been cultivated in Sant Llorenç de Morunys (Golden, Gala and Renoir) and contrast the result with a reference variety (Golden). After the physical-chemical and sensory analysis, indeed, some differences have been found between the varieties, especially when it comes to the parameters of density and hardness which lead to higher values for mountain apples than for the one established as the reference. Moreover, in regards to the sensorial attributes, it has also been found marked differences associated to the smell, crunchiness, noise, firmness, sweetness and flavor attributes that are higher in the mountain apples than in the reference ones. It can be concluded that, in a whole, the varieties of apple cultivated in the mountain, regarding the variety of apples taken as a reference and grown in the plain, show a better gustative quality.
La poma és un fruit molt cultivat i consumit arreu del món per les seves característiques nutricionals i per la facilitat del seu consum. Hi ha diversos autors que posen de manifest l'efecte de l'altitud en la qualitat de les pomes. Vistes diferents experiències de pomes de bona qualitat tant a Catalunya, amb la poma de Girona, com a Europa amb la producció que es du a terme en el Sud Tirol d'Itàlia, sorgeix la idea d'estudiar varietats de pomes produïdes en clima de muntanya, concretament a Sant Llorenç de Morunys i comparar-les amb una varietat establerta de referència. L'objectiu d'aquest estudi consisteix en caracteritzar la qualitat fisico-química i organolèptica de les varietats de pomes cultivades a Sant Llorenç de Morunys (Golden, Gala i Renoir) i contrastar-la amb una varietat de referència (Golden).
