Preparation of casein submicelle using chelating resin

Calcium in casein micelle solution was completely removed with resin within 30 minutes, and casein submicelle was prepared. After chelation the used resin was easily and quickly separated from the solution with a filter paper. Furthermore, only small changes in pH were observed during and after chelation, which means that environmental changes of submicelle were minimized during calcium removal. From results of HPLC on TSKgel G4000SW column and electron micros-copy the prepared submicelle had almost the same properties as those of submicell prepared by other methods.
