Zusammenfassung: | For wheat, which is mainly used as grain, its quality is the key to the taste of food after secondary processing, and wheat hardness is the ability of wheat grains to resist deformation and breakage under external forces, which is an important indicator of wheat quality and directly affects gluten strength and quality. The wheat hardness index refers to the mass fraction of the sample left on the sieve after crushing the wheat sample under specified conditions. The higher the hardness index, the higher the hardness of the wheat, and vice versa, the lower the hardness of the wheat.
The accuracy of hardness index measurement can directly determine the quality of wheat, making it a crucial measurement process. The article analyzes the uncertainty of the hardness index measurement process to identify the key influencing factors, namely the mass measurement process of the sample retained on the sieve, which provides reference for our daily measurement. |
