Zusammenfassung: | Lipases are important enzymes utilized in a variety of sectors, including the food and pharmaceutical sectors. They are important in dairy production because they influence the taste, texture, and overall quality of the products. However, excessive lipase activity can cause product deterioration and health problems. Traditional lipase detection approaches have drawbacks, including expensive costs, limited scalability, and the necessity for specialized skills. To overcome these concerns, new lipase detection techniques are being developed. The purpose of this review is to provide a complete overview of these emerging dairy technologies. We will examine the limitations of traditional methods and investigate innovative approaches such as nanoparticle-based tests, light-based sensors, tiny fluid-based systems, Raman spectroscopy, and electric sensors. We’ll also examine how artificial intelligence (AI) and machine learning (ML) are being utilized in lipase detection and discuss the challenges and opportunities this provides. The review will end with thoughts on probable future directions in lipase detection technology.
