Improvement of shelf-life of mangoes by chitosan coating enriched with cinnamon oil dissolved in Tween 80 combined with ethanol

This study aimed to evaluate the efficiency Pseudo-Ternary-Phase-Diagram (PTPD) method to improve the antifungal activity of cinnamon oil against Aspergillus niger and combined with chitosan (1.5% w/v) for mango preservation (infected A. niger spores). The results showed that the PTPD method was necessary to determine the ratio of the cinnamon oil in emulsifiers. The Minimum fungicidal concentration (MFC) value of cinnamon oil in Tween 80 using the PTPD method was 240 ppm which was 33% lower than the control sample. Ethanol was necessary to increase the solubility of cinnamon oil in which the MFC value of cinnamon oil in Tween 80: ethanol (5: 1) (CTE) was 140 ppm. The UV absorption value increased when increasing cinnamon oil concentration. In the agar diffusion test, the inhibition zone was only observed when cinnamon oil concentration in CTE increased to 4MFC value. Chitosan coating slowed down the weight loss and maintain the color of mango compared to control samples whereas, the CTE though did not affect the weight loss but on color changing of mango. The combination of chitosan and CTE (3MFC value) not only reduced the negative effect on mango peel cells but also maintain the antifungal efficiency over 12 days of mango storage at 30 °C. [Display omitted] •The PTPD method reduced the amount of cinnamon oil and ensuring antifungal efficiency.•Combination of Tween 80 and ethanol (5: 1) was necessary to increase the solubility and antifungal activity of cinnamon oil.•The cinnamon oil in Tween 80 and ethanol (CTE) though did not affect the weight loss but on color changing of mango.•The combination of chitosan and the CTE reduced the negative effect on mango peel cells and prolonged mango shelf life.
