Zusammenfassung:Deoxynvalenol and aflatoxins are frequently studied in food products due to their prevalence and toxicity. Deoxynvalenol (DON) can cause diarrhea, dysentery, ataxia, mucosal bleeding and sudden death. It can cause immune system disorders, gastroenteritis, dermatitis and blood diseases such as aleukia (ATA) and aplastic anemia. DON causes anorexia and vomiting because it affects serotonin-mediated neurons. In addition, it inhibits protein synthesis by preventing the binding of ribosome units. Aflatoxins are another mycotoxin that is important for animal and human health. Aflatoxins can trigger hepatocellular carcinoma, liver cancer, apoptosis and cytotoxicity, as well as cytokine expression. Sometimes these situations can cause sudden death. In this study, potato varieties collected from 4 different cities were examined. DON amounts were found between 0.2–1.8 mg/kg in Agria potato varieties and 0.2–2.1 mg/kg in Hermes potato varieties. Aflatoxin amounts were found between 2.9–8.7 µg/kg in Agria potato varieties and 2.1–9.1 µg/kg in Hermes potato varieties.
