Zusammenfassung: | A review of the manufacture, quality, and use of lecithin states that it is the most important by-product of the edible oil processing industry. The utilization of lecithin has expanded beyond its traditional applications; increasingly, lecithin is being used as a food ingredient in many modern food systems. The nutritional effect of lecithin currently is being evaluated as an important factor in improving neurochemical disorders. Lecithin also has been used to induce positive changes in cholesterol and circulatory factors. The major source of lecithin is processed soybean oil. (wz) |
