Zusammenfassung: | The velocity of the splitting reaction, which casein undergoes under the action of rennin and which is responsible for the rennet curdling of milk, can be determined by measuring at suitable time intervals the nitrogen soluble in trichloroacetic acid (non protein nitrogen: NPN). The NPN/time curves thus obtained generally follow fairly well the equation for first order reactions. The velocity constants have been determined graphically. |
