Zusammenfassung: | The effects of preconditioning on the ultimate shear force, shear stress, and shear fracture energy of the tibia from laying hens was investigated. Shear tests were conducted on specimens in the following conditions: 1) fresh, before drying could occur, 2) dried, cooked for 6 minutes in boiling water, defleshed, and dried for 24 hours; and 3) frozen, placed in air tight plastic bags, placed in freezer at -14 degrees for 2 weeks, then thawed for testing. Results indicated that preconditioning did not effect the shear force or stress of the tibia but drying caused a decrease in shear fracture energy |
