This difference is attributed to the higher acidity of maleic acid, which generates stronger ionic interactions with the ammonium sulfate system. In the case of tartaric acid, the deliquescence behaviour of ammonium sulfate is substantially influenced by the formation of insoluble ammonium tartrate. |
