Zusammenfassung: | The physical properties of thin films (25–30
μm) made from mixtures of sodium caseinate (NaCas) and whey protein isolate (WPI) were investigated. Films were formed by mixing solutions of NaCas (2.5% w/w protein), plasticised with glycerol (NaCas–gly) at a glycerol:protein ratio of 0.32, with WPI solutions (2.3% w/w protein), plasticised (WPI-gly) at a glycerol:protein ratio 0.37. Tensile and water barrier properties of films formed from mixtures of NaCas–gly and WPI-gly were similar to films containing NaCas–gly only. Films containing only WPI-gly had higher maximum load and elastic modulus values than the mixed films. Increasing the NaCas–gly content of the films from 25 to 100% greatly increased solubility. This increased film solubility may increase the number of food applications for protein-based films. |
