The analysis of the cheese and unpasteurized milk in outbreak one showed that Staphylococcus aureus was present at 2·4×103 – > 2·0×108 cfu g−1 and had produced the enterotoxins SEA, SEB, and SEC. The analysis of the raw milk in outbreak two indicated the presence of coagulase-negative staphylococci in counts exceeding 2·0×108 cfu g−1 and the production of enterotoxins SEC and SED. The specific enterotoxins found in each of the two outbreaks implicate the source of contamination in the first out break to be the food handlers and for the second case cattle mastitis.
